Pregelatinized starch—also known as instant starch, α-starch, or pregel starch—is produced from native starch through high temperature, high pressure, and controlled moisture conditions. During processing, starch granules swell, hydrogen bonds break, and the molecules become fully hydrated before being rapidly dried into a porous, free-flowing powder.
